Preparation
Preparation: Season the fillets with salt and pepper and let them come to room temperature.
Sautéing: Heat the olive oil in a large pan. Cook the fillets for 5-6 minutes on each side until they develop a nice color.
The sauce: Lower the heat and add the balsamic vinegar, honey, herbs, and optional aromatics to the same pan. Stir for 1-2 minutes until the sauce slightly reduces.
Finishing: Return the chicken to the pan and toss it with the sauce for 1-2 minutes until it becomes glossy and well-coated.

- 1/4 cup balsamic vinegar
- 1/4 cup honey
- 1 teaspoon dried basil or 1 tablespoon fresh basil

- 1 teaspoon Dijon mustard
- 1/2 teaspoon fresh thyme
